Adding a little breadcrumb to the salmon patty is our secret trick for keeping these burgers light and tender. Our tarragon-spiked mayo is delicious on the burger, but you can opt for your favorite jarred tartar sauce to save a step.

Ingredients
Tarragon Mayonnaise
- 1/2 cup mayonnaise
- 2 Tbsp finely chopped tarragon
- 1 tsp fresh lemon juice
- 1 garlic clove, finely chopped
- 1/2 tsp white vinegar
Burgers
- 1 lb skinless salmon fillet, cut into 1-inch pieces
- 1 Tbsp capers, finely chopped
- 1 small shallot, finely chopped
- 2 tsp Dijon mustard
- 1 tsp hot sauce, such as Tabasco
- 1 cup panko
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
Serving
- 2 Tbsp unsalted butter
- 4 hamburger buns, preferably brioche
- Butter lettuce, torn to fit bun
- Sliced tomato
