Burgers with Tarragon Mayo

Adding a little breadcrumb to the salmon patty is our secret trick for keeping these burgers light and tender. Our tarragon-spiked mayo is delicious on the burger, but you can opt for your favorite jarred tartar sauce to save a step.


Serves 4




Tarragon Mayonnaise

  • 1/2 cup mayonnaise
  • 2 Tbsp finely chopped tarragon
  • 1 tsp fresh lemon juice
  • 1 garlic clove, finely chopped
  • 1/2 tsp white vinegar



  • 1 lb skinless salmon fillet, cut into 1-inch pieces
  • 1 Tbsp capers, finely chopped
  • 1 small shallot, finely chopped
  • 2 tsp Dijon mustard
  • 1 tsp hot sauce, such as Tabasco
  • 1 cup panko
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper



  • 2 Tbsp unsalted butter
  • 4 hamburger buns, preferably brioche
  • Butter lettuce, torn to fit bun
  • Sliced tomato
