Turkey: Chicken Salad
Got a ton of turkey left? Transform your Thanksgiving turkey into Chicken “Turkey” Salad. First, shred your turkey meat into bite-sized pieces. Whip up a dressing that’s either mayo or yogurt-based and add a little vinegar for acidity. We recommend a combination of mayo, plain yogurt, fresh lemon juice and zest, and finely chopped dill and parsley. Toss and combine with some fresh veggies and herbs for a bit of crunch and fresh flavor. Season with salt, dried berries, or nuts.
Brussels Sprouts: Fried Rice or Quinoa & Brussels Sprouts Salad
Brussels sprouts are a holiday veggie staple. Use your extra sprouts in some fried rice, Thanksgiving-style. Since fried rice is a dish meant for using up leftover cooked rice and veggies, you can get creative with your combinations.
Another option would be to prepare our Guided Cooking recipe, Quinoa & Brussels Sprouts Salad. You can save yourself some time since you don’t need to cook your sprouts again. You’ll just need to warm them up and toss them with quinoa and the recommended vinaigrette.
Stuffing: Turkey Soup With Stuffing Dumplings
Leftover stuffing can be tricky to reheat or repurpose, as it’s often originally baked to create a nice crust. Since it can be difficult to get the stuffing back to fighting shape, we recommend using your leftovers to create our savory stuffing soup. Follow our Guided Cooking recipe on the CHEF iQ App for step-by-step instructions.
Cranberry Sauce: Acidic Jam for Sandwiches
A crafty way to use up your extra cranberry sauce is as a sweet spread on a sandwich. Make yourself a Thanksgiving-themed sandwich coated with cranberry sauce, roasted turkey, sliced brie, and arugula. The acidity of the sauce helps to cut through the fattiness of the brie, while the sweetness contrasts with the peppery arugula.
Gravy: Poutine or Gravy Fries
Your saved smokey turkey gravy can be repurposed in some delicious dishes. One of our favorite post-Thanksgiving treats is to prepare frozen French fries and douse them in some gravy. If you really want to step it up a notch, add some cheese curds to the mix, and you have yourself some delicious poutine in just a matter of minutes.
