Give Your Thanksgiving Leftovers Some Love

Turkey: Chicken Salad

Got a ton of turkey left? Transform your Thanksgiving turkey into Chicken “Turkey” Salad. First, shred your turkey meat into bite-sized pieces. Whip up a dressing that’s either mayo or yogurt-based and add a little vinegar for acidity. We recommend a combination of mayo, plain yogurt, fresh lemon juice and zest, and finely chopped dill and parsley. Toss and combine with some fresh veggies and herbs for a bit of crunch and fresh flavor. Season with salt, dried berries, or nuts.

Brussels Sprouts: Fried Rice or Quinoa & Brussels Sprouts Salad

Brussels sprouts are a holiday veggie staple. Use your extra sprouts in some fried rice, Thanksgiving-style. Since fried rice is a dish meant for using up leftover cooked rice and veggies, you can get creative with your combinations.

Make yourself a Thanksgiving-themed sandwich coated with cranberry sauce, roasted turkey, sliced brie, and arugula. The acidity of the sauce helps to cut through the fattiness of the brie, while the sweetness contrasts with the peppery arugula.

Gravy: Poutine or Gravy Fries
