Watermelon & Feta Salad

Serves 6 to 8
Ingredients:
- 1/2 small watermelon, cut into a 1-inch dice to yield about 8 cups
- 1/2 cup crumbled feta, plus more for serving
- 1/4 cup extra-virgin olive oil
- 1/2 cup thinly sliced fresh mint leaves, plus more small leaves for garnish
- 1 Tbsp finely grated lemon zest (from about 1 large lemon)
- 1/2 tsp kosher salt
Steps:
- Combine all ingredients in a large bowl and toss gently to combine.
- Transfer to a platter or plates and serve topped with additional feta and some whole mint leaves for a beautiful presentation.
