Delicious (and Vegan!) Coconut Whipped Cream

Whip up your own homemade Coconut Whipped Cream with this simple recipe from the CHEF iQ Test Kitchen – Perfect for topping your Vegan Chocolate Cake, Lemon Cheesecake, or a classic ice cream sundae. Here's how to make yours: 
What you'll need:
  • 1-14oz can coconut cream/ full fat coconut milk 
  • 1/4 c powdered sugar 
  • 1/2 tsp vanilla extract (optional) 
How it's done:
  • Chill can in the refrigerator overnight to separate cream and liquid. 
  • Scrape thickened cream from the can, leaving remaining liquid behind. 
  • Place hardened cream in mixing bowl and whip with a hand mixer until creamy. 
  • Add sugar and vanilla (opt) and whip until smooth and creamy, around 1 min. 
  • Taste and adjust the sweetness to your liking.   
  • Dollop on top of your favorite dessert for an easy vegan treat!
