Watermelon & Feta Salad

The most delicious summer salad is also the easiest to make: Crisp, refreshing watermelon paired with tangy feta, brightened by fresh mint. Serves 6 to 8

Ingredients:

  • 1/2 small watermelon, cut into a 1-inch dice to yield about 8 cups
  • 1/2 cup crumbled feta, plus more for serving
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup thinly sliced fresh mint leaves, plus more small leaves for garnish
  • 1 Tbsp finely grated lemon zest (from about 1 large lemon)
  • 1/2 tsp kosher salt

 

Steps:

  1. Combine all ingredients in a large bowl and toss gently to combine.
  2. Transfer to a platter or plates and serve topped with additional feta and some whole mint leaves for a beautiful presentation.
